After the popularity of our first limited edition Honey Habanero Sauce, we felt that even though the first batch tasted amazing, it fell short in a couple of departments, firstly that sauce kicked you in the face with heat, which if you were not aware or careful could certainly ruin a meal, and it had a proclivity to separate and required constantly shaking to keep the sauce together. We wanted to come back after the christmas break and get this sauce right, and make this recipe one of evergreen product lines going forward!

We returned to the kitchen to perfect our recipe, thanks to One Stop Chilli Shop for the super fresh Yellow Habanero peppers in the dead of winter. This iteration takes a few steps to ensure that the sauce stays bound together namely adding a few extra ingredients such as Capia Pepper, and the correct amount of Xanthan Gum to give a smooth and saucy consistency.

This time we made twice as much, last time we could only manage 19 bottles, this time we are back with nearly 40 bottles. We upped the ante with the amount of Honey, this sauce is now perfectly balanced between heat, and sweetness, setting the stage for the flora Habaneros and the undergrowth of garlic to shine.
