This bold blend brings together our house kimchi and signature hot sauce recipe, layered with deep umami and tangy heat. We’ve added naga chillis for a blazing finish.
Bang it on eggs, rice, noodles, or anything that could use a kick of umami fire.
We have been making our own homemade Kimchi even before we started The Sauce Forge. We love its rich umami flavour, and how it can add spice and texture to rice and ramen, and as a quick snack in a pinch! We have been toying with the idea of add a straight up kimchi product to our line up, but found that it needs to be made and eaten quickly (or at least it is in our house!) and can become too sharp after a while (this isn't a problem for us, but for the uninitiated this might be problematic). So we've shelved that idea for now!
We still really wanted to have a product featuring that Kimchi flavour, so why not combine our signature sauce base with our homestyle Kimchi, and kick the spice level up a notch with some Naga Peppers and call it a day! We called it Napa Naga after the two core ingredients present in our new sauce!
We initially conceived this to be an very small batch experimental sauce, much like our initial run of Catsup back in May, but we got excited brewing Kimchi again and ended up making of over 50 bottles 😅 Not to worry however, we are super excited how the flavour profile of this sauce turned out. This sauce packs our signature flavour with the fire of the Naga peppers with trailing deep umami that we can't get enough of!
When it came to the label, we didn't to just slap another wizard on the bottle. We also didn’t want to gloss over the Korean roots of kimchi, and we also didn't want to just appropriate korean culture and go with something cliche, pastiche, or mascotified. Since we like to reach for mythology as inspiration, we decided to incorporate the mythological figure of the Moon Rabbit (Daltokki), into our design to symbolise the care, craft, and quiet magic of fermentation. In Korean folklore, the Moon Rabbit is said to live on the moon, endlessly pounding rice cakes, a symbol of nourishment, patience, and devotion. We felt this gentle spirit captured the essence of this sauce and what we do, a balance of heat and depth, tradition and experimentation, and love stirred into every bottle.
If you can handle the heat go crazy, put it on everything you can think of and let us know how it goes! But for those who can't we suggest you go easy to start! Naga chillies are quite potent in this sauce.
